Instructions

Things You'll Need:

  • brown rice
  • diced carrots and peas
  • bean sprout
  • mushroom
  • egg beaters
  • fried rice seasoning
  • low sodium soy sauce
  • garlic powder
  • ground ginger
  1. First in a small dish, combine seasoning mix from either Kikkoman or Sun -Bird, I prefer Kikkoman. 1/8 tsp garlic powder, and 1/8 tsp ground ginger with 1 tsp soy sauce again I use Kikkoman and 3 tbsp. warm water. Using a fork or whisk, stir until seasoning mix has dissolved. Then I Set aside.

  2. Next, Spray a large pan with non stick spray or a wok, but I don't have a wok, and bring it to medium heat on the stove. Add 3/4 cup egg substitute and scramble until cooked, using a spatula to break it up into little pieces. Remove scrambled bits from the pan and set aside.

  3. Next, Add 1 cup mushrooms and 2 cups frozen vegetables to the pan, and cook and stir until mushrooms have softened and all veggies are hot. Remove veggies and set aside with the egg bits.

  4. Last, Remove your pan from heat, re-spray with non stick spray, and bring to high heat on the stove. Add 2 cups brown rice and 1 package seasoning mixture, and stir to combine. Add 1 cup bean sprouts, 1/4 cup scallions and the previously cooked veggies and scrambled eggs, and mix thoroughly. Cook and stir until entire mixture is hot, there is no liquid left in the pan, and rice is just beginning to crisp. Season to taste with salt and pepper. This recipe is only 3 points for 1 cup and it is only 167 calories per cup. The total made should be about 5 cups.

Lately.........

Well, there's not been much going on lately.  The girls are back in school.  I quit my job at the Children's Farm Home. I am now waiting for my background check to come back so I can start working as a classified substitute at the Albany school district.

Last day of school!!!!!

The girls just finished their 'first' last day of school. I can't believe we survived the school year!  Yay, us!

Gym.....

Signed up at Fitness Experience on Saturday so I can workout with Bryan.  Walked a mile and then did a few sets on the weight machines.


Worked for 6 hours today weeding the flower beds in the front of the house.  That was quite a chore.  I cut a few things down, transplanted others, and some got the RoundUp treatment.

Surgery

Went in on Friday morning and had my gall bladder taken out!  Still suffering the ill effects of having a belly pumped up with CO2.

Gall Bladder

Spent a few hours in the Emergency Room on Monday due to a severe Gall Bladder attack.  Will be having surgery on Friday to have it removed!

Hippie Chick 2010

Well, I was able to complete the 1/4 marathon (6.5 miles) in 2 hours, 1 minute, and 41 seconds!  I placed 189th out of 206 finishers.  There were 655 finishers in the 1/2 marathon.  It Rocked!

training

I did pretty good this week on workouts.  Did water aerobics on Tue & Thur;  23 miles on the bike and a little bit on the treadmill along with the pace circuit.  Trying really hard not to hurt my feet too much.

39 days...

I was able to walk a mile on the treadmill in less than 20 minutes last night.  Need to work on more mileage.  Gotta hit the gym every day!

Return to normal?

Goodness it has been a while since I posted.  Just spent the weekend in Portland at the Baby Boomer Fitness conference learning how to train people in this age group. 

Haven't been able to get much training time in as my feet still hurt most of the time.  I am still hoping to participate in the Hippie Chick 1/2 marathon in May.

Girls are back in school after having Spring Break off.  Although, Abby came home sick at noon.
